Dear visitors,

 

The estate is located in the North-East of the Chablis appellation, in a small village named Béru, the smallest village in the Chablis area. Béru has 80 inhabitants and is surrounded by its vineyards and its richness. The family production has been passed down through several generations, following traditional methods with respect for the Terroir, the People, and the Know-How.

 

Isabelle, Jean-Pierre, and Cyril will be happy to welcome you in their cellar, where you can taste and appreciate their Chablis.


A Brief History from 1985 to Today...


1985

Jean-Pierre settles with 1.20 Ha of vineyards and 40 Ha of crops.

 



1991

Acquisition of the first machine. Before that, all tasks were done manually. 



1996

Construction of the winery with the acquisition of stainless steel tanks.

 



2005

Expansion of the winery.

 



2010

Taking over family parcels. Combined with regular annual planting, the estate now covers approximately 25 Ha. 



2015

Bottling at the property and direct sales.

 


Our Vineyards

 

Our vineyards are mainly located in Béru, Fleys, and Chichée and span an area of 25 Ha. They are situated in Chablis appellations, as well as in Chablis 1er Cru (Fourneaux, Mont de Milieu, and Vaucoupin). The age of the vines ranges from 1 to 70 years, which also allows us to offer Old Vine Chablis.

 

All our vines grow on clay-limestone "Kimmeridgian" soils, which provide Chablis wines with their minerality and power while allowing floral and fruity aromas to express themselves. The vines are pruned using the simple and double Guyot methods (traditional Chablisian method).

 

We manage our vineyards in a sustainable manner. Indeed, we pay particular attention to the surrounding biodiversity and limit the use of fertilizers and plant protection products to the strict minimum. We continuously strive to evolve our practices to meet future challenges (e.g., plowing, inter-row cultivation, pruning of shoots, phytosanitary waste treatment...).


Winemaking

 

During harvest, the grapes pass through a pneumatic press. The obtained juice is then transferred to temperature-controlled stainless steel tanks. Traditional winemaking is carried out through the following steps: settling, alcoholic fermentation, malolactic fermentation, racking (if needed), aging on fine lees. At each stage, the wine is tasted and analyzed to closely monitor its development. The wine is then bottled at the property about 8-10 months after the harvest. Finally, we proceed with labeling the bottles and packing them as needed.

 

We take care to make our wines with minimal intervention to allow the Chablis terroir to express itself in the best possible way. However, our curiosity leads us to create atypical aging methods for some cuvées, much to the delight of our customers.


Tasting

 

We offer our entire range for tasting in our "house" cellar. This is an opportunity for us to present our estate, our activities, and our wines in a moment of sharing and conviviality. A tour of the facility is also possible.

 

Tastings are available from Monday to Saturday from 10:00 AM to 12:00 PM and from 2:00 PM to 6:00 PM, preferably by appointment.
