Characteristics: Pale yellow color with light yellow highlights. The nose expresses fresh fruits, such as citrus (lemon, kumquat) combined with white fruits (white peach, pear). Crisp, fresh attack with a lingering finish. The aromatic profile on the palate reflects that of the nose.
Food Pairing Suggestions: Appetizers, oysters, cold cuts.
Aging: Best enjoyed within 2 years.
Terroir: The Petit Chablis vines are located on the upper slopes, at the start of a plateau; the soil, of "Portlandian" type, consists of hard limestones. Our single plot, planted in 2018, faces full south
Characteristics: Yellow color with silver reflections. The nose shows finesse, with a dominant minerality of chalk and flint. Fresh notes of almonds and citrus add complexity. Round attack with light, integrated mineral acidity. The finish is rich with buttery notes, providing great length.
Food Pairing Suggestions: Oysters, seafood, shellfish, grilled meat, Japanese cuisine.
Aging: Up to 5 years.

Terroir Chablis / Chablis Vieilles Vignes:
The primary composition of the soil is clay-limestone with underlying layers from the Jurassic period, specifically from the Kimmeridgian (about 150 million years ago). In the rock, we find tiny oyster deposits that once belonged to a warm, shallow sea that covered this land. These oysters, in the shape of commas, are called Exogyra virgula. The exposure, relief, and altitude of our Chablis plots are highly varied. We currently work about thirty plots, planted between 1955 (Chablis Vieilles Vignes) and today.
Characteristics: Pale gold color, with a subtle first nose of citrus and delicately herbaceous freshness. The mouth is immediately voluptuous, with a wrapped-up finish of pastry notes.
Food Pairing Suggestions: Scallops, poultry, aged cheese, goat cheese, andouillette.
Aging: Up to 10 years
Terroir: Situated on the right bank of the Serein River in the commune of Chichée, Vaucoupin stretches over 45 hectares. The soil is primarily composed of white limestone, occasionally covered by a very drying clay. The Kimmeridgian marl is shallow. The plot we work on (planted in 1955) is located on a delicate plateau with a south orientation, giving it excellent sun exposure. This warm terroir allows the vines to reach excellent maturities, though it is also demanding, particularly in dry years.
Characteristics: Pale gold color, subtle first nose with chalky notes. Round mouthfeel, with a finely milky and fresh butter finish.
Food Pairing Suggestions: Oysters, seafood, scallops, shellfish, Burgundy snails, Japanese cuisine.
Aging: Up to 10 years.
Terroir: This hill, once split in two by a real boundary separating the County of Champagne and the Duchy of Burgundy, gives the plot its name. It enjoys sunlight from morning to evening, thanks to a south/south-east facing slope with a moderate, regular incline. Facing the Serein Valley, which is particularly wide at this point, Mont de Milieu is open and airy. The soil, homogeneous over its 44 hectares, consists of clay-limestone and small white limestone pebbles. We currently work on four plots, all planted in 1987.

Terroir: The Fourneaux benefit from superb exposure, and their name clearly refers to heat. The hill covers about 33 hectares with a Kimmeridgian subsoil and a clay-rich soil with small pebbles. Located at Fleys on a secondary valley slope to that of the Serein, this hill enjoys favorable exposure to the south and east. This specific exposure makes it a warm terroir, bathed in sunlight, where the grapes thrive and ripen easily. We currently work two plots, one planted in 1960 and the other in 2000.
